  • Shrimp in the reach-in: 54.5º
  • Ham on cold table: 60.8º
  • Beef in walk-in: 41º

Observations and Corrective Actions:

  • Employees not wearing gloves
  • Dishwasher does not have enough sanitizer
  • Cold table temp above 41º
  • Ice machine needs cleaned
  • Need to Date mark all items
